LOCAL FISH, MEAT AND VEGETABLES PROVIDERS

Vegetables, seaweed, herbs, funghi

Samphire: harvested locally from early to late summer it grows on the margins of the tidal marsh in front of the town. It is a succulent type of seaweed often loosely compared to asparagus. Its unique salty seaweed flavour we use, for example in a dish of crab claws sautéed in garlic butter with samphire.

Asparagus: the brief season for Norfolk Asparagus occurs in spring and can be as short as two weeks, but fine local asparagus cannot be beaten and we rarely extend its local season by buying from anywhere else.

Herbs: Norfolk is famed for the commercial production of herbs such as Norfolk Lavender, Parsley and others. We grow our own herbs and salad leaves in our kitchen garden in the town and gather them daily through the growing season. With our salads we offer such leaves as Sorrel with its tart raspberry quality and fragrant Thai basil.

Mushrooms: Commercial mushrooms are produced locally in Siderstone. Our seasonal wild mushrooms are picked almost throughout the year by local pickers, and time permitting by ourselves.
